The palate is beautifully concentrated, juicy and fresh, brimming with lemon-edged Mirabelle fruitiness. A chalky depth anchors everything in more coolness despite the ripe, rounded vintage. Robert Parker/Wine Advocate – The Pouilly-Fume Tradition has much less of the green flavors often connected with this appellation. Instead, it is rather floral, displays more yellow colored fruit aromas , whereas the fascinating foundation is built up by crushed limestone rocks.
Andrew is still part of the picture – he grows the grapes – and reluctantly acknowledges that he is also a fan of the new style. These old vines were planted in the 1970’s and produce low yielding and concentrated fruit. The vineyard is planted on red volcanic clay and faces east resulting in less sun exposure allowing for slower and more even ripening. The grapes were handpicked when just ripe to maintain high natural acidity and low potential alcohol. Pleasant soft tannins rich red fruit with a great finish. Delectable and fruity with toasted notes and lovely power.
They draw on the skills and knowledge gleaned from years in the industry, both here and internationally, to take your tasting skills and wine knowledge to the next level. Mineral water with steeped lemon peel and lime leaf on the palate. 30% whole bunch ferment (7 days – 75% dryness) no crushing at all during this period, 70% direct press to stainless on full solids, all ambient yeast. After pressing the whole bunch component, the two ferments were combined in concrete and left on lees for 3 months. Two months on lees before being sulphured allows for malo lactic fermentation to occur to varying degrees. In the winery, we leave the wine on lees to develop palate texture.
Sofitel's on-site restaurant Garçon Bleu can be found on level nine. The team, led by chef de cuisine Gianni Delogu serves up modern French fare with a touch of drama. Kick things off at the bar with a glass of bubbles and crisp whitebait, before perusing the wall of wine and making your way to a table with a bird's-eye view of the city. The fit-out is classy but there's nothing stuffy about the delivery.

Dry red wines, of course, have their sugars completely fermented into alcohol... But some of these wines can still have a suggestion of fruit sweetness. Grenache for instance, is much more likely to seem sweet than Cabernet.
